GEOGRAPHIC AND HISTORICAL REFERENCES
In the Metauro valley a vine called Bianchello or Greco Bianchello or
Biancame has spread and prevailed since 500 a.C.. It is read
in Tacit that the Bianchello was the main cause of Asdrubale's defeat
in the famous battle of Metauro.
It is narrated, in fact that the troops of the
Carthaginian general, in the warm summer of the year 207 a.C., inebriated
with the
wine gulped down in great abundance, were surprised from Livio Salinatore,
PorzioLicinio, Claudius Nerone's Roman military troops, while trying to conquer the Metauro
river.
Was Rome safe, therefore,
thanks to Bianchello? Let's be calm, but apart the historical, anecdotal news,
there is the fact that nowadays the Bianchello is living a happy season for the reputation
it deserves as a very pleasant completion of fish meal .
It's the
wine immortalized from the descriptions of " Frusaglia ",and many other books
set in the Pesarese. Today the Bianchello is also served like an aperitif. It
is situated in the catchment - basin of the Metauro river in province
of Pesaro-Urbino.
The exposed slopes to South and South-West in the medium and
low hills that slope down to the sea from the Appenines spurs have the
inclination for the cultivation of this vine.
There are 18 municipalities
within the DOC zone.

COUPLING WITH FOODS
It's' young
people's wine, lively, healthy, it needs company, it generates friendship, it sets you
free from the psycho-physical hard work.
A smile satisfies like no drink.
It prefers molluscs,crustaceans and fish at sweet tendency, alive or in
soft sailor-like bakings. It exists a harmonious relationship between some
fish menůs and the liveliness of the Bianchello.
The shadings between straw and green, the delicate body that from the soft impact turns to the dry one with
very fresh and clean spurs, exalt the taste and the iodine fragrance of the alive fished.
The couplings are optimal with Whiting, Passera, Melů etc..., boiled or passed on the live
coal, just moistened with the local extra-virgin oil (Cartoceto).
It
perfectly combines with simple plates of sweet white meat (chicken chest,
rabbit etc.), with soups, with rice or pasta, also dry and softly flavored.

VINES
"The Bianchello", "Biancame"
or "Greco di Bianchello" are
the most frequently used synonymous or names indicating the vine which the homonymous wine derives
from. Grapes of the Malvasia Tuscany
kind until a maximum of 5% can concur to its production.
ORGANOLEPTIC FEATURES
ASPECT: Yellow
straw-colored, of frequent drainage, with green shadings . The freshness (acidity) and the liveliness
(carbon dioxide) of the first period visibly emphasize the transparency and
the fascinating hues.
BOUQUET: Tenuous and delicate, persistent
enough.
It reminds fresh fruit (pomacee) and white
spring flowers (Peach-tree and hawthorn).
TASTE: Dry, very cool, harmonious, pleasant and very delicate alcoholic
perception.
ALCOHOLIC CONTENT: totally minimum 11,5° C.
TOTAL ACIDITY:
From 5.5 to 8 per thousand.
DRY EXTRACT: from 16 to 24 per thousand.
OPTIMAL
AGE
If you drink it new, within the first
year,
it expresses at its best its freshness and fragrance. It also resists well,
according to the vintage years and the selections, to a moderated aging (1-2
years). In such case the wine expresses also its
savouriness and maturity.
WINE-GLASS AND SERVICE
A thin, uncolored and slender
goblet, increases the wine lively brightness , fully emphasizes the thin
freshness and the smell of fruit. The glass, only half filled up, allows
to grasp the wealth of humors.
At 6°-7° C it is a good and stimulating aperitive.
At meals it is normally served at 9°-10° C.
