Wines and vines 

GEOGRAPHIC AND HISTORICAL REFERENCES 

The basic component is the Verdicchio grape , to which can be added other white  berry vines, recommended or authorized in the production zone. 
The taste is dry, harmonious with a pleasant bitter. 
The verdicchio di Matelica is produced in a narrow land border that interests the province of Macerata and Ancona. In total eight municipalities: 6 of the province of Macerata and 2 of Ancona. Rich territories of history and tradition, marked also from the presence of towers and castles.

The zone of the highland known as " sinclinate camerte " it is the only zone of the peninsula, outside of the castles of Jesi, where the vine keeps its particular characteristics .

COUPLING WITH FOODS

We deal with a wine from the multiple approaches even if it reaches the highest levels with plates of fish. Optimal with raw appetizers (molluscs of varied species avoiding those at fosfo-iodic taste), with tasty meat fish, and sauced, first plates of fish, seafood lasagne and rice. 
When it is more mature is perfectly bound together with the Adriatic sole with "the sapa" and also with the stoccafisso all'anconetana. 
The persistent and fragrant bouquet, the harmony of the ingredients, allow it to have numerous other couplings: with the ham of Carpegna, ciavuscolo (soft cured pork salami), salami of Fabriano, "coppa"of head tasty and fragrant of spices, white meal.

VINES

It is obtained with grapes of Verdicchio vine, for a minimum of 85%. Some grapes coming from white berry vines can concur to the production of this wine, for a maximum of 15% 

 ORGANOLEPTIC FEATURES

ASPECT: Tenuous straw-colored with light green glares. It tends to the golden one with the maturation, turns to the amber one in " the Passito".
BOUQUET: Fresh and resistant fragrance of fruit, not completely mature, flowers of grass lands, underbrush. In" the Passito"  becomes heavenly and intense
TASTE: Dry, mellow and pleasant at the first impact, it turns to fresh with delicate bitter tendency and pseudothermal heat. It proposes fresh, fine, elegant fruity-floral emanations. Velvety and harmonious in " the Passito"
ALCOHOLIC CONTENT: total minimum "Verdicchio di Matelica " 11,5° C, " Riserva "12° C. " Passito " 15° C. minimum
TOTAL ACIDITY: 5 per thousand minimum (4 per thousand for " the Passito").
DRY EXTRACT: Minimum 16 per thousand (18 for" the Riserva ", and 19 for " the Passito").

OPTIMAL AGE

The Verdicchio di Matelica tipology must be drunk new

WINE-GLASS AND SERVICE

Goblet of medium amplitude and spherical tendency ,uncolored, smooth and very thin, with a long stem. A goblet more tapered to the edge for a mature wine. The softness of the wine allows the service around 15° C. It is necessary a higher temperature (16°-18° C) for a more tannic wine and for that wine whose body has reached a two, three year maturation.
